Chicken Biryani is a flavorful and aromatic rice dish loved worldwide. This easy version is perfect for beginners and guarantees a restaurant-style taste at home.
⭐ Easy Chicken Biryani Recipe
🥘 Ingredients
For marinating the chicken:

Chicken – 1 kg

Yogurt – 1 cup
-
Ginger–garlic paste – 2 tbsp
-
Lemon juice – 1 tbsp
-
Salt – to taste
-
Red chili powder – 1 tsp
-
Turmeric – ½ tsp
-
Garam masala – 1 tsp
For the rice:
-
Basmati rice – 500 g
-
Cinnamon – 2 sticks
-
Green cardamom – 3–4
-
Cloves – 3–4
-
Bay leaves – 2
-
Salt – 1 tbsp
For final layering:
-
Fried onions (birista) – 1 cup
-
Green chilies – 4
-
Fresh coriander & mint – 1 cup
-
Ghee – 3–4 tbsp
-
Saffron soaked in warm milk (optional) – 2 tbsp
🍲 How to Cook It (Step-by-Step)
1. Marinate the chicken
Mix chicken with
yogurt + ginger–garlic paste + chili powder + turmeric + salt + garam masala + lemon juice.
Let it rest for at least 1 hour (2–3 hours is even better).
2. Cook the rice (70% done)

Wash and soak the rice for 30 minutes.

Boil water with cinnamon, cardamom, cloves, bay leaves, and salt.

Add rice and cook until 70% done.
Drain and set aside.
3. Cook the chicken

Heat oil or ghee in a pan.

Lightly sauté onions until soft.

Add the marinated chicken and cook for 15–20 minutes.
Keep a little gravy — don’t dry it fully.
4. Layer and steam (Dum)
In a large pot, layer:
Bottom: a little ghee
Next: cooked chicken
Next: rice
On top, add:

Fried onions
-
Mint & coriander
-
Green chilies
-
Ghee
-
Saffron milk (optional)
Make 2–3 layers like this.
Cover tightly and cook on low heat for 20–25 minutes.
